D'Astorga studied music in Naples and went on to work in Rome, Vienna, and Dresden. He was a prolific composer, writing primarily vocal music including operas, cantatas, and sacred music.

One of his most famous compositions is his Stabat Mater, which is a liturgical hymn about the Virgin Mary's grief during the crucifixion of Jesus. This piece is known for its intricate harmonies and emotional intensity, capturing the sorrowful tone of the text.
